HCG Meatloaf

This is not your ordinary meatloaf not only is this hcg friendly but it tastes so good...now when you see it has pickles in it you might think in crazy but I promise I'm not!! The only thing crazy is how good this is!

1lb lean ground beef
1 yellow onion diced
1 can of tomato sauce
1 can of tomato paste
6-8 small dill pickles diced
1 egg

Combine beef, onion, pickles, egg, and 3 tablespoons of tomato sauce in a bowl and combine well. Transfer mixture to a baking dish and shape it however you would like(it does shrink during cool in keep that in mind) bake at 400 degrees for 20 minutes you will have to drain the liquid out 2-3 times
Combine tomato sauce and paste in a bowl and pour over meatloaf reduce oven to 350 degrees and continue cooking another 30 to 45 minutes until it is cooked thoroughly. Remove from oven and enjoy along side asparagus spears

HCG Korean Beef

My friend makes this amazing Korean beef and serves it with rice and cabbage salad with a ramen noodle crunchy topping it's delicious but full of sugar and carbs and a lot of fat (from oil) but the basics aren't that bad and it has amazing flavor! So I decided to recreate it in a semi hcg friendly way
So here goes....

2lbs lean ground beef
1/3 cup Splenda brown sugar blend
1/4 cup low sodium soy sauce
3 TBS minced garlic
1 TBS sesame oil
1/2 Tsp ground ginger
3-6  Chile de árbol  pods
6 chopped green onions 

In a large skillet heat the oil and add in the garlic and sweat it for a few minutes be careful not to burn it then add the ground beef and fry making sure to crumble it. While the beef is cooking combine soy sauce water ginger Splenda/brown sugar mix and chopped chiles the amount you use depends on how spicy you like it....I use 4 but remove the seeds of 2. When the beef is almost browned add the liquid mix and combine then just let it simmer over medium heat until all the liquid has cooked out. Serve with cabbage salad and chopped green onions.

HCG Bacon Breakfast

Ok so this might sound a little crazy and it's basically just bacon and eggs BUT bacon and eggs on hcg is heaven! Especially when everyone else gets to eat a big huge fatty hearty breakfast

1-3 slices TURKEY bacon
1-2 eggs
3 tablespoons of water or calorie countdown milk
Melba toast optional

THATS it!

Fry your turkey bacon until crisp and drain on paper towel )it depends on how many calories you want to use for how many slices 1 slice 25 calories)
Beat eggs with milk or water and scramble in the pan using the leftover fat from the bacon(not a lot don't worry)  I sprinkle eggs with a little sea salt after I scramble them just a sprinkle!

You can serve this along side a slice of Melba toast and/or a half a grapefruit sprinkled with a little truvia

Super simple, super easy, super delicious breakfast!

Faux rice pudding

creamy, sweet, and filling

you will need:
1 cup fat free cottage cheese
1 teaspoon truvia sweetener
pinch of nutmeg
1/2 teaspoon cinnamon

mix cottage cheese with sweetener, cinnamon, and nutmeg

yields 2 servings
1 protein

Summer Strawberry Salad

Satifying, sweet, and filling!

you will need:

1 chicken breast grilled and sliced thin
1 cup baby spinach leaves or romaine salad mix
5 strawberries sliced thin
1 teaspoon fat free raspberry vinigarette salad dressing


Top greens with warm chicken, fresh strawberries and dressing
Yields 1 serving
1 protein 1 fruit and 1 veg

HCG Lemonade

Very refreshing on a hot summer day and super easy to make.

you will need:
4 TBSP Lemon Juice
4 packets Truvia
12 oz Cold Water
fresh mint leaves(optional)


Add Truvia (or sweetener of your choice) and lemon juice to a tall glass mix together pour in cold water and mix well garnish with some fresh mint and enjoy!!

I use the little lemon shape bottles of juice just because fresh lemons are a pain, but use what you have or is best for you.

This recipe has amounts that taste good to me you can add more or less lemon and more or less sweetener make it your own!!!

HCG Chicken Spinach Meatballs

Made this last night and it was soooo good I wanted to eat them all!!
The parm cheese is optional but I do eat white lower fat cheeses while I'm on phase 2 and 3 hasn't hindered my weight loss just keep in mind moderation!!

you will need:
1 lb ground chicken
3 melba toasts smashed to bread crumbs
1 whole egg
3 gloves garlic minced
3 green onions finely chopped
1 cup spinach frozen, thawed and all the water squeezed out
1/2 tsp sea salt
1/2 tsp pepper
2 TBSP grated Parmesan cheese
pre heat oven to 375 line a baking sheet with aluminum foil( Reynolds wrap non stick foil is amazing!) combine everything in a large bowl combine well to get all the flavors distributed evenly. Next grab a palm full at a time and roll into balls place on baking sheet and press down to make a meatball/tiny chicken patty shape. Cook 20 minutes and turn them over and cook an additional 20 minutes or until outsides are brown and inside is fully cooked.

Yields about 3 to 4 meatballs per serving

this meal equals 1 veg, protein and melba toast

You can serve topped with marinara sauce or with a side of tzatziki sauce

feta cheese could also be added or substituted
ground turkey or ground beef can be used if ground chicken is not available just remember it has to be very lean
